Carolanne Rushe is a plantbased chef and entrepreneur.
Trained through Ballymaloe Cookery School and the Matthew Kenney Culinary School, Rushe spent six years travelling the world and discovering new flavours and recipe ideas. From Western Australia back home to the West of Ireland, she began her first Irish business trading as Green Warrior at the Strandhill People’s Market in 2014. Less than a year later she opened the doors to her first plantbased cafe – Sweet Beat, and just this summer, opened a second eatery – Sweet As Diner + Deli. She currently employs 26 people across both businesses in Sligo town. Since 2014, Rushe has been feeding vegans all over the world, from supper-clubs in Perth to market stalls in South Africa and Strandhill. She employs a zero-waste ethos and works with local growers to supply her busy plant-based eateries.
